Origin & history
Gaeng Som is one of Thailand’s oldest traditional curries, especially popular in Southern and Central Thailand. Unlike creamy coconut curries, it was developed as a lighter, sharper dish suited for Thailand’s tropical climate and coastal fishing communities. Southern versions became especially famous for their extreme heat and heavy use of fresh turmeric.
