Origin & history
Lòng lợn is part of Hanoi's long tradition of nose-to-tail cooking, where every part of the animal is used. It developed as an affordable, practical street and neighborhood food, especially in working-class breakfast culture, and remains a familiar local specialty in the capital.
How to order & pay
For solo diners, ask for a small portion or 'một suất nhỏ'. If you want a milder version, say 'ít cay' for less chili. Point to the exact offal cuts you want if the menu is limited. If you are unsure, order one bowl first because portions can be filling.
Cash is still the safest option at small Hanoi street stalls, and small notes are easiest to use. Many casual places now accept QR payments, but do not assume card payment is available. Keep 20,000-50,000 VND notes ready for quick solo ordering.
Allergens, nutrition & health
Allergens
May contain fish sauce and cross-contact with shellfish, soy, or sesame at shared stalls
Nutrition & benefits
High in protein and iron, but also relatively high in cholesterol and sodium
Health notes
Choose busy stalls with fast turnover and freshly cooked offal. Avoid if you have a sensitive stomach, high cholesterol concerns, or are pregnant. Ask for thoroughly cooked pieces and skip raw herbs or extra chili if your stomach is delicate.
How to eat it
Eat it with chopsticks and a spoon, dipping pieces into salt, pepper, lime, and chili. Add herbs gradually so the flavor stays balanced. If served with congee or noodles, alternate bites to soften the strong offal taste.
